Seal pressure cooker and bring to high heat for 30 minutes to 90 minutes&#xA;&lt;ul&gt;&#xA;&lt;li&gt;30 minutes is fine appropriate for simple soups and lightly flavored dishes. 60 minutes is suitable for ultra rich stocks and sauces&lt;/li&gt;&#xA;&lt;/ul&gt;&#xA;&lt;/li&gt;&#xA;&lt;li&gt;Remove from heat, and let cool naturally. Do not rapidly release the steam, as this will cause turbulent action within the pressure cooker, clouding your stock&#xA;&lt;ul&gt;&#xA;&lt;li&gt;In an Instantpot, this can take upwards of 30-45 minutes. You can speed up this process by partially blocking the steam vent and carefully releasing the steam slowly&lt;/li&gt;&#xA;&lt;/ul&gt;&#xA;&lt;/li&gt;&#xA;&lt;li&gt;Strain and use the stock, or chill for later. You can skim any fat off the top easier if the stock has been chilled overnight&lt;/li&gt;&#xA;&lt;/ol&gt;&#xA;&lt;h2 id=&#34;notes&#34;&gt;Notes&lt;/h2&gt;&#xA;&lt;ul&gt;&#xA;&lt;li&gt;If not gelatinizing to your liking, you can always add powdered gelatin until it reaches the consistency you desire. Use enough to get a proper coating&lt;/li&gt;&#xA;&lt;li&gt;Rub (pat) spices thoroughly over the whole brisket&lt;/li&gt;&#xA;&lt;li&gt;Place brisket on rack placed into a sheet tray, then place everything into the preheated oven&lt;/li&gt;&#xA;&lt;li&gt;Cook for 1 hour, then remove tray from oven. It should be starting to show signs of a &amp;ldquo;bark&amp;rdquo; on the outside. Optionally, add more liquid smoke to the brisket&lt;/li&gt;&#xA;&lt;li&gt;Add a little bit of water into the pan. This helps add moisture to the environment, much like a smoker would have steam from wood chips&lt;/li&gt;&#xA;&lt;li&gt;Continue cooking brisket 2-3 hours longer, until brisket is dark brown and looks appetizing. Add the chicken, the oil&amp;rsquo;s temperature should drop. Maintain about 340f while frying for 90 seconds. Remove from oil and place onto wire rack placed onto a sheet pan.&lt;/li&gt;&#xA;&lt;li&gt;Place the chicken on the wire rack + sheet pan combo into a 285f oven for 10 minutes to finish cooking through. Rest in fridge for 30 minutes. Bake the pastry for 10 minutes, then remove the wax paper and rice / beans. Cook for 5 minutes more&lt;/li&gt;&#xA;&lt;li&gt;Turn the oven down to 320F (160C)&lt;/li&gt;&#xA;&lt;li&gt;Fry the bacon and leek in a pan with the knob of butter and plenty of black pepper.
